Sweet Potato Pie Pancakes


This is a great recipie to used up excess cooked sweet potato or pumpkin.



This is a large amount of mix - i only made such a large amount because i had 1 1/2 cups of sweet potato to use from dinner the night before.
Ingredients
1 1/2 cups mashed sweet potato
3 cups milk
2 1/2 cups self-raising flour
3 tsp cinnimon
1tsp freshly grated nutmeg
1 heaped scoop whey powder (optional)
1 Tblspon vanilla extract
4 eggs
1 tsp salt
unsalted butter or oil (for cooking)
maple syrup (to serve)
Method
1. Whisk all ingredients together til smooth
2. Melt a knob of butter in a pan and cook a scoop of the mixture on a medium/low heat, flipping with a spatula when browned on the bottom and bubble appear on the top.

Note: these pancakes need to be cooked on a gentler heat and the mixture needs to be spread quite thin or you'll have a raw middle due to the moisture in the sweet potato.

Double (dark) Choc, Walnut, and Bran Muffins



Ingredients
3/4 cup milk
1/4 cup oil (or melted butter)
1 cup bran
1 cup plain flour
2 1/2 tsp baking powder
1/2 tsp salt
1/3 cup cocoa
1/2 cup sugar
1/2 cup chopped 70% chocolate
1/2 cup chopped walnuts

Instructions
1. Preheat oven to 180 degrees C. Line muffin tin with patty pans.
2. Combine all ingredients in a bowl.
3. Fill muffin pan 2/3 full with muffin mixture and bake til skewer comes out clean.
4. If desired ice (i topped with melted chocolate and shredded coconut YUM!)

Banana Bread


Ingredients
3/4 cup whole-wheat flour
1/2 cup plain flour
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 cup firmly packed dark brown sugar
1/4 cup oil (or melted butter)
2 eggs
2 cups mashed banana
1 tsp of vanilla extract (NOT essence)
OPTIONAL: I also add a heaped scoop of whey powder to bulk up the protein

Method
1. Preheat oven to 180 degrees C. Grease and line a loaf pan.

2. Mix dry ingredients (minus sugar) in a bowl.

3. Mix the remaining ingredients in a different bowl. Then add dry ingredients and mix til just combined.

4. Pour in loaf pan and cook for 55 - 60 minutes.
