Sweet Potato Pie Pancakes


This is a great recipie to used up excess cooked sweet potato or pumpkin.



This is a large amount of mix - i only made such a large amount because i had 1 1/2 cups of sweet potato to use from dinner the night before.
Ingredients
1 1/2 cups mashed sweet potato
3 cups milk
2 1/2 cups self-raising flour
3 tsp cinnimon
1tsp freshly grated nutmeg
1 heaped scoop whey powder (optional)
1 Tblspon vanilla extract
4 eggs
1 tsp salt
unsalted butter or oil (for cooking)
maple syrup (to serve)
Method
1. Whisk all ingredients together til smooth
2. Melt a knob of butter in a pan and cook a scoop of the mixture on a medium/low heat, flipping with a spatula when browned on the bottom and bubble appear on the top.

Note: these pancakes need to be cooked on a gentler heat and the mixture needs to be spread quite thin or you'll have a raw middle due to the moisture in the sweet potato.
